One of the many things I was looking forward to doing in Ireland was driving down to Powerscourt and meandering around the gardens, taking lots of photographs, and then eating lunch at Avoca. I couldn't resist goading myself by looking through Avoca's cookbooks this afternoon. These Rocky Road bars remind me of classic birthday party treats. How could anyone resist!?
480g milk chocolate, broken into pieces
100g digestive biscuits (try Graham crackers if US)
80g marshmallows, cut in half
80g shelled hazelnuts, skinned & toasted.
Melt chocolate in double boiler. Line a tin with baking parchments, break up the biscuits by hand and place in tin. Dot in half the marshmallows and all the hazelnuts around the biscuits. Pour over the chocolate and gently shake to ensure even distribution. Dot the remaining marshmallows on top. Chill until set and then cut into squares with a sharp knife.
